Master Baker & Executive Pastry Chef Production Director (Signal Hill)

Responsibilities:      Lead, supervise and direct a team of at least 80 bakery staff working to produce high-end daily offerings of high-quality, fresh baked goods. Determine the products, offerings, and ingredients on hand or will need to fulfill for each and every order. Timely deliver and review complete and consistent great quality product, costing and food safety protocols. Develop unique products that align with customers’ needs to make the best use of their budget and often-complex requests to ensure maintenance and success of business relationships and growth of the backend business. Apply expertise in baking and pastry production in blending science, process, and creativity to delight our client’s sensory expectations. Present awe-inspiring baked product solutions to new corporate clients. Analyze and identify if an ingredient or flavor is missing in any given product, and quickly and concisely fix the issue. Lead the development and refinement of new and existing recipes to create better-tasting products. Implement simple ingredients with revamped flavors, updated designs, and beautiful decorations have been integrated into our product line to align with changing consumer trends. Improve products and identify issues when they arise. Maintain smooth operations of our company and ensure that our customers receive high-quality, fresh baked goods on a daily basis.

Educ./experience:   Three (3) years’ experience as Executive Pastry Chef applying classical French pastry techniques. Experience must include development, design and creation of new culinary techniques and ideas, introducing new items/recipes that are a hybrid of conventional French products, overseeing kitchen’s pastry and baking functions including menu development inventory and cost control using HMI software, Risco, Z-Bake Production Scheduling software and ESHA Nutrition Labelling software.
